Sausage Gravy & Biscuits

My mom is a great cook, there are many dishes that I love, tasty treats that remind me of home.  Sausage gravy is tops on my list of breakfast items and is super easy and delicious.  First of all, I know this sounds bad, but it’s best to use sausage that has a lot of fat in it, Neese’s country sausage has plenty, perfect for sausage gravy.

Fry your sausage in a saute pan, break it down to crumbles with a fork. Brown your sausage. Tilt your pan to pool the grease, if you use a different sausage and there is not enough grease, add veggie oil, you need to have two tablespoons or so of grease.  Put a couple tablespoons of flour (pancake mix will work too), in the grease and make a roux with your fork, as soon as it makes a paste, mix in your sausage.  Add half & half, then let sit till it thickens. Add salt & pepper and water if it gets too thick.  A little crushed red pepper is really good too.

Serve on biscuits, I buy the Mary B’s tea biscuits in the freezer aisle of your grocery store.  These baby biscuits are so good, directions say make sure they are touching when you bake them, helps them rise.  Try out this classic southern staple.
