Leftover Muffins

Another snowy, well not actually snow anymore, just the remains of dangerous ice covering the grounds, still enough to shut us down.  Southerners crack me up.  We see a little snow and we flake. Get it?  Flake. 

I decided to make some muffins of some sort today, so I preheated my cast iron muffin pans and cleaned out the fridge, in a bowl, I mixed cooked crumbled sausage, cooked grits, spooned out one-fourth of a baked potato, onion, jalapeno, mozzarella cheese, four eggs, little half & half, flour and a dab of water.

Poured them in my preheated cast iron pans and baked till golden brown.  They turned out to be little spicy hot soufflé bites.  Just in time for Mr. B to come down and make us some coffee!
